Any Fruit Coffee Cake July 21,2008

Tonight we had a lovely meal on the patio. Sam loves eating out there, not looking forward to the fall now that I think of it. Any hoo Sam managed to eat his second hamburger, who knows what the future brings. We concluded our dinner with a fruit coffee cake recipe that I acquired from my cousin Simone! You can use most any fruits and it always turns out!

Any Fruit Coffee Cake

(When serving a crowd double the recipe and bake the coffee cake in a 13x9x2 inch pan for 40-50 min)

1 1/2 cups chopped,peeled apples, apricots, peaches, or pineapple;or 1 1/2 cups of blueberries or raspberries.
1 cup of sugar
2 tablespoons of cornstarch
1 1/2 cups of all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
6 tablespoons of margarine or butter
1 beaten egg
1/2 cup of buttermilk or sour milk
1/2 teaspoon of vanilla
1/4 cup of all purpose flour

In saucepan combine choice of fruit and 1/4 cup water. Bring to boil; reduce heat. Cover and simmer about 5 minutes or till tender. Combine 1/4 cup of the sugar and the cornstarch. Stir into fruit mixture. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Set aside.

In a mixing bowl stir together 1/2 cup of the sugar, the 1 1/2 cups of flour,baking powder and baking soda. Cut 4 tablespoons margarine or butter till mixture resembles fine crumbs. Combine egg, buttermilk/sour milk, and vanilla. Add to flour mixture. Stir till moistened.

Spread half the batter in to an 8x8x2 inch baking pan. Spread fruit mixture over batter. Drop remaining batter in small mounds atop the filling.

Combine the remaining 1/4 cup sugar and the 1/4 cup flour. Cut in remaining 2 tablespoons of margarine/butter till mixture resembles fine crumbs. Sprinkle over batter. Bake in a 350ยบ oven for 40-45 minutes or till golden brown. Serve warm. Makes 9 servings.

*Note do not simmer raspberries.

A couple days in Whistler July 17 & 18,2008

So we headed out of town for a couple of days and headed up to Whistler. What a beautiful place. I can honestly say that I had not been to Whistler in about 10 years. It was nice to revisit old and new areas. We stayed outside the village and that was great for us not being in the busy busy area.

Bronwynne went and stayed a few days with Grandma & Papa. Apparently with everybody else, when we returned to pick her up Al-E(Judith's dog) and Deanna(Karen's cat) were also there. Sorry Mom & Dad! But thank you!

Summer Sun is Here! July 11,2008

Hello all,

Well the summer sun has finally arrived and we have been out and about. We have been to a few functions and seen a few friends. The house keeps us busy as usual. A few projects on the the go. we tackled the side of our driveway the other day. Since we have moved here it has been one of those we will get to it later projects. Well last year when we did the front of our property we managed to tackle part of the side, you know weed management. But alas the fall came and it sat. Well with the slow start to the westcoast season we finally have attack it. We cleared the weeds and other extras. And today we had a truck deliver a few yards of crushed gravel and river rock to match the front. As we worked away we always look at each other and say "Are we having fun yet?". Needless to say the job got done Sam had fun helping water the new cedars we put in and climbing the rock piles.Pics to follow in the next entry.

On a side note the other night at dinner I thought I may be at the wrong house. Sam finally ate a HAMBURGER! I hope it was not a one time venture. I can actually say I am getting sick of chicken. The additional pictures are from us goofing around in the front yard after dinner.

Canada Day July 1,2008

We celebrated Canada Day with friends and ran into our families. The best of both worlds. Our friends Jill & Russ opened their home for a BBQ celebration, but prior to that we all met and attended some of the activities at the Cloverdale Millennium Park. The kids had a great time going on some rides. Sam enjoyed a walk around and that is when we bumped in to Grandma, Papa, Auntie Karen & Sarah. There was an assortment of games, freebies and entertainment to be enjoyed by all. Then we headed back to our friends house. The kids ran around the sprinkler and more friends joined us to celebrate the day.
After arriving home and getting Sam to sleep we sat to reminisce about the day and we even got to see some fireworks from our front window!
